Dr. Scheider taught nutrition at Buffalo State College for 25
years with an emphasis on nutritional ecology, environmental and
health effects of the food system, risk communication of foodborne
hazards, food security, and nutrition education. He also worked
extensively with community organizations on food security and food
safety issues. Dr. Scheider currently teaches SPM 549 Environmental
Health and SPM 519 Principles of Measurement in Public Health and
works with grassroots community organizations concerned with
reducing air pollution and improving access to safe, nutritious,
and affordable food.
